Mini Corned Beef Quiches
Ingredients
1 x 340g can Hertford Corned Beef
4 eggs
½ Cup half and half cream
½ teaspoon nutmeg
½ teaspoon cayenne pepper
½ teaspoon garlic powder
1 tablespoon salt
1 Cup shredded cheddar cheese
1 Cup chopped cooked spinach, drained well
2 packages pre-made puff pastry dough
Directions
1. Heat oven to 350º F/175º C.
2. Whisk together eggs, cream, and spices.
3. Stir in beef, cheddar, and spinach.
4. Roll open dough and cut into 4” square sections.
5. Line a lightly oiled muffin tin with one square of puff pastry dough.
6. Evenly distribute egg mix between each muffin section.
7. Bake on the middle rack for 25-30 minutes, or until egg is set in the center.
8. Let cool slightly before serving.
